Our Spring Menu at Gruvelageret grew from an overall inspiration — the feeling of the season itself that you get only in Svalbard ✨Store Norske Mandskor’s song Midnattsol captures this emotion beautifully: it's the fjords, the tundra, the birds, the natural treasures the sea sends ashore, and the fresh notes carried by Isfjorden breeze.
This inspiration has shaped our menu, which has already been enjoyed by many guests over the past two weeks. We are grateful to bring it all together here in the history-preserving old town of Sverdrupbyen — with the leadership and talents of Gruvelageret, the voices of the local choir, and the natural surroundings of this preserved historical site where we gather to dine.

🇳🇴 Randi Solvang er et ungt talent innen konkurranseskyting, og vi er heldige som får følge satsingen hennes. I år er Gruvelageret og Svalbard Explorer stolt sponsor og gleder seg til å heie henne fram!
Randi er Hedlys barnebarn, og selv om hun fortsatt er ung, viser hun allerede imponerende fokus, stå-på-vilje og gode resultater.
Vinterfelt er veldig gøy, synes hun, og hun har allerede hatt flere seire og gode pallplasseringer på stevnene hun til nå har deltatt i.
Med flere konkurranser i vente, og banesesongen som nå begynner for fullt, ligger det an til en spennende tid fremover. Blant annet venter Nordnorsk Mesterskap og Landskytterstevnet på Lesja i sommer.
Det er skikkelig inspirerende å se hvor mye engasjement og disiplin Randi legger ned i satsingen sin. Vi er veldig glade for å kunne støtte henne på veien videre, og gleder oss til å følge med på alt hun får til i år. Vi kommer også til å dele mer om satsingen hennes fremover.

🇬🇧 Randi Solvang is a young talent in competitive shooting, and we feel grateful to follow her journey. This year, Gruvelageret and Svalbard Explorer are happy to support and cheer her on along the way!
Randi is Hedly’s granddaughter. Although she is still very young, she already shows impressive focus, motivation and strong results.
She finds winter field shooting really fun, and she has already earned several wins and strong podium finishes in the competitions she has taken part in so far.
With more competitions ahead, an exciting season awaits. This summer, Randi is preparing for the Northern Norwegian Championship and Landskytterstevnet at Lesja.
It’s inspiring to see so much passion, discipline, and hard work at such a young age. We’re very happy to support Randi on her journey and can’t wait to follow everything she accomplishes this year.

Gruvelageret hosted a pop-up by our chef Manish, marking his farewell before returning to his home country, India. “Now, I want to continue my journey by bringing people together around a table and telling stories through my own pop-up dinners,” Manish said, dropping a hint.
Pravaas — the Indian cuisine pop-up — took guests on a journey across India: from Kashmir’s shirmal kulcha with morels and kalari, to Amritsari fish fry from Punjab, vibrant Delhi chaat, comforting moringa soup from Madhya Pradesh, and a Maharashtra thali with bhakri, mutton and rice. The menu continued south with scallops balchao, jackfruit idichatthu with coconut and parotta, and bold North East flavours of akuni, pork and bamboo shoot, before ending with jamun sorbet, mango–fig dessert, and handmade petit fours.
The journey was appetizing, colourful and refreshing. It was long — as it takes time to travel across the regions of such a big and diverse country!

The Gruvelageret team works together like a dance. It is never one person’s win or one person’s failure. It is always a team, no matter how independent everyone may be.
Gruvelageret people know this, and they mostly feel at home in Svalbard.
In the video, we only show those who have been working full-time in the back and front of house. There are more people to show, such as General Manager Kristin and Owner Steve who restored Gruvelageret and gave this place the direction it has today. And there is Hedly, who makes sure everything works behind the scenes. There are also people who work extra, or who worked full-time before and contributed to the growth of this place. Or people who contributed to designing Gruvelageret by gifting us collected artefacts from old coal mining times.

Head Chef Max: "For me, Gruvelageret is about both exploring flavors and creating a great working environment. In my opinion, the hardest part of being a head chef is remaining professional while staying humble, and I believe that is what makes a good manager. At work, I try to be well organized, plan ahead, work hard, and stay creative and passioned. I also try to share my experience while encouraging Kacper and Manish to explore their own ideas and contribute to creating new dishes.."
Chef Kacper: "I would describe myself as hardworking, reliable, and always on time. I try to be a bit of a sunshine (saying it while smiling🌞) in the kitchen with a positive attitude, good energy, and a smile, even during busy service."

Vi har en sterk lidenskap for mat og vin, vi ønsker å servere et måltid med preg av Arktis og det nordiske, men som også viser mangfoldet i å bo like under Nordpolen. Vi samarbeider med lokale produsenter og er alltid på søken etter de beste produktene. I juni 2022 ble vi Miljøfyrtårnsertifisert og har siden jobbet kontinuerlig med å begrense matsvinn og velge de beste produkter fra bevisste leverandører. Fra produktet kjøpes inn, fraktes, tilberedes og havner på tallerkenen din ønsker vi å gi deg en god matopplevelse samtidig som at vi sitter igjen med minst mulig avfall og matsvinn.
